Whole 30 / WEEK 3

Hey guys!  I hope you all had a great weekend!  We had amazing weather here in KC, and it was such a welcomed change from the stifling heat.   This is the last week of the Nordstrom Anniversary Sale, so if you’ve been debating anything, I’d swipe it now!  You’re gonna wish you did after the prices go up and you change your mind this fall!  Several items quickly went out of stock, but they have been processing a lot of returns, so I’ve seen things come back into stock periodically.  You can see my favorites here.

This past week of my Whole 30 was probably the easiest so far, with the exception of eating out.  We went to lunch at a Chinese place with some family, and there was NOTHING on the menu that I could have.  I was kind of shocked actually.  Everything had soy and/or sugar.  I don’t know what I was expecting, but it was very frustrating.  Apparently the Chinese don’t eat salads.  I had never given that much thought until I was staring at the menu, desperately searching for something I could eat.  I debated just skipping the meal and eating when I got home, but I had to put my son down for a nap that afternoon, so I knew if I didn’t eat right then, it probably wouldn’t happen until much much later…and I would have been STARVING.  So, I ordered steamed vegetables.  And, they were kind of gross.  I ate them, with a lot of salt, but it definitely was not what you would call satisfying.  So, lesson learned.  No more restaurants without salads until I’m finished with this!  ha!

We also went to an event at Holladay Distillery, but I knew they were going to have hamburgers there, so I just ate one without the bun.  That was pretty easy to modify.
Other then my eating out dilemmas, I feel like I have somewhat hit a plateau this week.  I am not really sure if this is a good thing or not.  I didn’t feel sluggish, unusually tired, or have any headaches this week…but I also am not feeling amazing yet.  I feel really good in the morning, but then as the day progresses, and I eat a couple of meals, I feel and look bloated.   Not sure what’s going on there, but hopefully it evens out after a few more days.
I’m also missing being able to enjoy social cocktails.  Attending an event at a distillery when you can’t drink is not exactly ideal!  I sipped on my club soda with lime, but it just didn’t quite cut it.  But, I can see a light at the end of the tunnel.  Today marks day 21, which means I have 9 days left.  I am going to try my best not to go balls to the wall on day 31.  I really do want to slowly incorporate different foods back into my diet to see how they affect my body.  Buuuuut, its’ my birthday, aaaaaaand I have a friend coming in town, a friend whom I haven’t seen in many years.  So, I am going to TRY, but I can’t make any promises.
I honestly ate fairly healthy before I started Whole 30.  I really do want to continue a lot of these eating habits, but I’m not going to lie…it is hard.  Especially when you are flying solo.  Sitting there with my lonely salad on family pizza night, while I am cutting pizza, and blowing it off for my son is pretty much torture.  Part of me thinks, life is short, so what the heck?  Have a piece.  Hopefully I can just find a good balance in the end…a mix of healthy foods the majority of the time with some splurges along the way to keep me sane!

What I ate:
Sweet potato breakfast bowls.  I talked about these last week, but I am still loving them, so this is what I ate the majority of the mornings.   It’s so easy to make a big batch over the weekend and then it lasts all week and I don’t have to think about breakfast on busy mornings.
Fajita eggs (eggs with sautéed peppers and onions)
Tuna salad: canned tuna, avocado, dijon mustard, a hard boiled egg, salt, and pepper.
Beef Barbacoa (the fam had tacos and I made a salad)  I had lots leftover, so this fed me pretty much all week.  Lots of barbacoa salads this week, which is fine by me because I think I could eat Mexican food every day if I had to!
Chicken lettuce wraps Another staple meal around here, but I had to do some adapting to cut out the sugar and soy that is included in most lettuce wrap recipes.  This is a yummy, yet still whole 30 approved meal!

Spaghetti with meat sauce.  I had good intentions of making a spaghetti sauce from scratch, but then I found this one and it was just too easy to open the jar.  It was actually really good!  My family ate noodles and I spiraled a zucchini.

And, I’m still loving the Dump Ranch I posted about last week!  It’s so darn good!  I added a bunch of fresh chives to my batch.
