I have only cooked eggplant once in my entire life. A few years ago, I attempted to make eggplant parmesan, and it was a complete disaster. It made a HUGE mess, and while the end result tasted pretty good, the prep and the clean up was enough to convince me I should never make it again. If I want eggplant parmesan, I’ll be calling the local Italian restaurant and ordering takeout. For some reason, this eggplant involtini recipe caught my eye the other day. I made it last night, and it was absolutely delish! Easy to assemble and little cleanup required!
My mom has been bringing boxes of stuff from her attic each time she comes to visit. It’s been so fun to go through all of the different things from my childhood and dust off old memories. My 20th high school reunion is coming up and man that makes me feel old! When did that happen? I feel like I blinked and now I have 2 kids, a husband and I somehow turned into a grownup. We just went to Cancun earlier this month, and they no longer allow tourists to climb Chichen Itza, so it was neat to find this picture that we took from the top of the pyramid prior to the climbing ban.
