My FAVE No-Bake Energy Bites

I love a good energy bite!  We have them available pretty much constantly in this house.  Known by other names like granola balls, energy balls, snack bites, power bites, etc, energy bites are super convenient for a number of reasons.  I store mine in the freezer and they keep for months…not that they ever last that long.  I eat them for a quick breakfast on the go, or for an afternoon snack.  And I have also used them as a supplement for an after dinner sweet fix!  Hey, it’s better then the frozen cookie dough I am actually craving.  Both of my boys like them too, so they come in super handy when we need an easy little bite to eat but don’t have time to sit down at the table.

There are a bunch of different recipes out there for similar energy bites, but I have made countless batches and tweeked this one to my liking.  That’s the beauty of energy bites…you can change it up and make them however you prefer.  Don’t like peanut butter?  Try almond butter instead.  Not a fan of chocolate?  Leave out the chocolate chips or substitute white chocolate chips or even dried fruit like cranberries or cherries.  The possibilities are endless!  A lot of recipes call for honey, but I prefer the taste of maple syrup.  However, honey is easily substituted, so feel free to swap it out of that’s your jam!

We make several different varieties of energy bites in this house, but this is my go-to favorite one that is loved by all!

1 cup dry oats
2/3 cup creamy peanut butter
1/2 cup semi sweet miniature chocolate chips (I like the mini ones, but regular will work too!)
1/3 cup maple syrup
1/2 cup flax meal
1 tsp vanilla

A quick, random tip on measuring your peanut butter…  To scoop out the peanut butter and put it in the measuring up, then scrape it out of the measuring cup is just too much work for me.  I usually get my food scale out and estimate the number of ounces I need.  This is not the right amount for this recipe (you actually need 2/3 cup, which is 5.33 ounces), but I wanted to show you this simple kitchen hack that saves me time!

After you get everything measured out, you just stir it up and get everything blended really well.  If the mixture is too sticky, you can refrigerate it for 30 minutes and then smoosh, squeeze and roll them into balls, about 1″-1.5″ big.  Refrigerate or freeze and ENJOY!  Just look at these beauties!

These are so good, you’re going to want to eat them for every meal!  It’s a treat that packs a powerful health punch.  I love anything that multitasks as much as us mamas do!  NOM NOM NOM
