Whole 30 / Week 2

Hey there friends!  I wanted to check in and let you know that I'm still riding the Whole 30 train!   If you missed last week's post, you can check it out HERE.  I'm happy to report that the headaches have subsided and I feel less tired than I did last week.  I wouldn't go as far as to say I have mountains of energy, but I feel back to normal.

One of the reasons I wanted to do Whole 30 was to improve my sleep.  I have always been a restless sleeper, and I have a hard time falling asleep.  I lay there at night, just waiting for my mind to chill out long enough to let go and fall asleep, but sometimes it takes hours.  I have not seen any improvement in my sleeping as of yet.  But, I am hopeful.  I know the first two weeks of this program are supposedly the worst, and then the benefits start appearing in weeks 3, 4, and beyond.  Fingers crossed I can start sleeping better because this mama is tired!  Not being able to fall asleep until 1:00am, having your son wake up at 2:30 (for no legit reason), then having my alarm go off at 5:00 for my workout has worn me ragged.





Working out has also proven to be more difficult.  Mustering the energy required to get through my barre routine is harder then I anticipated.   I know lack of sleep doesn't help with my energy levels, but I also know that most people experience an increase in energy after the first two weeks...so again...I'm hopeful!

Some things I am definitely missing while on this journey are:
WINE
gum
snacks
wine
sweets
chips
wine
cheese
oh, and wine

So, pretty much everything I am not supposed to have is what I am craving.  Ugh.  Hopefully those cravings go away.  Except for the wine.  I don't think that one will ever go away!  And no, I'm not an alcoholic, I just enjoy a glass (or 2).

The weekends are also more difficult, I think because my husband is home, and we usually indulge a bit more on the weekends with cocktails and take-out sometimes.  We happened to have family visiting from out of town this past weekend, so there were lots of temptations, but I stuck to my guns and ate my plain hamburger patty, salad, and grilled zucchini.  Sunday is traditionally our pizza day, and that's been hard.  I have just been making myself a salad, but to sit there munching on my lettuce while the rest of my family is chowing down on some chewy, cheesy pizza is not exactly easy.

I honestly think because I am sharing this with you, it's been easier.  Although you may not realize it, y'all are holding me accountable.  The fact that I have told you what I'm doing and I chose to report a blog update on a weekly basis has kept me honest and motivated to stay on track.  So, thank you!


What I ate:

Eggs and sugar free bacon (I searched and searched for sugar free bacon, so a huge thanks to my friend, Tracey, for locating some at Nature's Grocers in Liberty, MO!  If you're local and looking for some compliant bacon, you should go check them out!  I know Whole Foods carries it, but I don't live close to one)

Sweet potato breakfast bowls.  I'll admit, I wasn't super excited to eat sweet potatoes for breakfast.  For some reason, this didn't sound appealing in the slightest.  But, I was getting tired of eggs, so I gave this a shot and it quickly became my favorite breakfast!  You should totally give it a try, whether you're doing Whole 30 or not!

Asparagus, egg, and bacon salad.  This is SO yummy!  Another fave before I even started Whole 30, so I was excited to easily adapt it (with the sugar free bacon)

Beef Stew with red potatoes, sweet potatoes, carrots, and onions.  I had lots of leftovers, so this fed me for lunch and another dinner meal!

Salmon brushed with ghee and greek seasoning, asparagus, side salad

Grilled shrimp skewers, brushed with ghee and Italian seasoning, green beans, grilled zucchini

Bundt pan roasted chicken, veggies, salad

Hamburgers, grilled zucchini, salad with this AMAZING Whole 30 ranch dressing.  Tracey, the same friend who saved me from bacon cravings, shared this recipe with me and it's SO good.  Seriously, so good.  Even my husband and super picky 7 year old ate it and liked it!
