Whole 30 / WEEK 3

Hey guys!  I hope you all had a great weekend!  We had amazing weather here in KC, and it was such a welcomed change from the stifling heat.   This is the last week of the Nordstrom Anniversary Sale, so if you've been debating anything, I'd swipe it now!  You're gonna wish you did after the prices go up and you change your mind this fall!  Several items quickly went out of stock, but they have been processing a lot of returns, so I've seen things come back into stock periodically.  You can see my favorites here.

This past week of my Whole 30 was probably the easiest so far, with the exception of eating out.  We went to lunch at a Chinese place with some family, and there was NOTHING on the menu that I could have.  I was kind of shocked actually.  Everything had soy and/or sugar.  I don't know what I was expecting, but it was very frustrating.  Apparently the Chinese don't eat salads.  I had never given that much thought until I was staring at the menu, desperately searching for something I could eat.  I debated just skipping the meal and eating when I got home, but I had to put my son down for a nap that afternoon, so I knew if I didn't eat right then, it probably wouldn't happen until much much later...and I would have been STARVING.  So, I ordered steamed vegetables.  And, they were kind of gross.  I ate them, with a lot of salt, but it definitely was not what you would call satisfying.  So, lesson learned.  No more restaurants without salads until I'm finished with this!  ha!

Lettuce Wraps (Whole 30 Compliant)

Lettuce wraps are kind of a staple dinner item around this house.  They are easy, quick, and everyone eats them.  My sons prefer to wrap their goods in a tortilla vs lettuce, but hey...whatever works!  As long as they are eating dinner without complaining, I'm good with it.

Most lettuce wrap recipes contain soy and sugar.  I set out to adapt my favorite version of this to be Whole 30 compliant, and it was actually pretty darn easy.  My usual go to recipe for lettuce wraps is  this one from Iowa Girl Eats.  When I'm not concerned about the soy and sugar, it is my all time favorite.

Copycat Chipotle Beef Barbacoa (Whole 30 Compliant)

My love for Mexican food runs deep.  I could eat it every single day and be happy!  When I make Mexican food at home, I find it fairly easy to keep it somewhat healthy, but when I'm out at a restaurant, I have zero self control (bring on the chips and cheese dip!).  Mexican food is also easy to modify into a meal that is both Whole 30 approved, and kid/husband approved.

Back when I lived in Las Vegas, I ate Chipotle at least once a week.  A couple of co-workers and I would go get our weekly fix (sometimes twice a week), and it never disappointed.  One of my favorite things on the menu is their beef barbacoa.  It's so delish, and I really wanted to find a way to make it while I was participating in Whole 30.  This copycat version is a damn good replica!

Whole 30 / Week 2

Hey there friends!  I wanted to check in and let you know that I'm still riding the Whole 30 train!   If you missed last week's post, you can check it out HERE.  I'm happy to report that the headaches have subsided and I feel less tired than I did last week.  I wouldn't go as far as to say I have mountains of energy, but I feel back to normal.

One of the reasons I wanted to do Whole 30 was to improve my sleep.  I have always been a restless sleeper, and I have a hard time falling asleep.  I lay there at night, just waiting for my mind to chill out long enough to let go and fall asleep, but sometimes it takes hours.  I have not seen any improvement in my sleeping as of yet.  But, I am hopeful.  I know the first two weeks of this program are supposedly the worst, and then the benefits start appearing in weeks 3, 4, and beyond.  Fingers crossed I can start sleeping better because this mama is tired!  Not being able to fall asleep until 1:00am, having your son wake up at 2:30 (for no legit reason), then having my alarm go off at 5:00 for my workout has worn me ragged.

Working out has also proven to be more difficult.  Mustering the energy required to get through my barre routine is harder then I anticipated.   I know lack of sleep doesn't help with my energy levels, but I also know that most people experience an increase in energy after the first two again...I'm hopeful!

Sweet Potato Breakfast Bowls (Whole 30 Compliant)

I have to admit, I wasn't super excited to make sweet potatoes for breakfast.  I like sweet potatoes, but that just did not sound very appealing to me.  However, after eating a lot of eggs over the past couple of weeks, I was ready for a change.  I came across this recipe and thought I'd give it a go.  Worst case, if I didn't like it, I could make more. eggs. again.  Much to my surprise, I LOVED this!  I don't know if its because I haven't had anything sweet in over 2 weeks, but I liked this so much, I went back to the store and loaded up on sweet potatoes.  I made a massive amount of these bowls to last me the whole week!  They were just as good the 3rd and 4th day as they were the first.  And having breakfast already prepared for me was such a lifesaver on busy mornings!  Just throw some blueberries on top, and it's ready to be devoured.

Anyway, who knows how I'll feel once I am back to eating more of a variety of foods, but for now, these sweet potato breakfast bowls are amongst my favorite breakfast options!  I have a feeling I'll continue to make them even after I am finished with Whole 30.

So, if you're in a breakfast rut and need help thinking outside the box, then give this recipe a shot!  It is really freaking good!


2 large sweet potatoes
1/3 cup almond butter
1/3 cup full fat canned coconut milk (not in the carton)
1 tsp cinnamon
1/2 tsp nutmeg
handful of blueberries for garnish (optional)


Wash sweet potatoes and poke a few holes in them with a fork.  Wrap potatoes in foil and bake at 400° for about an hour, or until soft.  Let them cool slightly.  Remove skin; it should slide off easily.  In a food processor, combine all ingredients, except blueberries.  Blend until the mixture is smooth and creamy.  Top with fresh or frozen blueberries and extra cinnamon if desired.  

You can double the recipe and make a breakfast that will last several days!  Refrigerate any leftovers.  It’s delicious served both hot and cold.

FAVORITES From the Nordstrom Anniversary Sale

The good ole Nordstrom sale opens to the public TODAY (up until now it has only been early access for Nordstrom cardholders), and although some things are showing sold out, don't get discouraged.  Many people (myself included) order multiple sizes of things and then send back the ones that we don't want.  So, there is hope!  You just have to be a little bit of a stalker.  Channel that inner stalker self and act like that out-of-stock cardigan or booties you want is your ex-boyfriend's twitter account.  And, don't act like you don't know what I'm talking about!  Keep checking back and chances are, you will snag what you want.  I stalked the Leith cardigan big time last year and ended up snagging it!  So glad I did too because I wear it all.the.time.

Since there are SOOOOOO many good deals at this sale, I thought I would round up some of my ultimate faves.  It can be a bit overwhelming to look through thousands of items in search of the perfect finds.  Here are some things that I either ordered, or really really liked (and would have ordered if money grew on trees).  If you want to check out the full posts I did on the sale last week, you can see them here:  PART 1,  PART 2, and PART 3.

Let's also talk about why Nordstrom is a great place to shop.  They have an amazing selection, good brands, items in all price ranges imaginable, and the best part is that they offer free shipping BOTH WAYS!  So, instead of dragging my kids with me to the store, and threatening their lives when they don't behave while I am trying on clothes...I just have things shipped to me and I get to try them on at my convenience.  Then I just ship back whatever I don't love.  It's so incredibly easy!  They have amazing customer service too.  Top notch!

Whole 30 / Week 1

It's officially been 1 week since I began the Whole 30 program. ONE WEEK. Is that really all?  I seriously feel like it's been waaaaaaay longer than that. Not necessarily in a bad way, but it does seem like it's been longer then seven days. Only 23 days to go 😬

In all honesty, the first week wasn't as bad as I was anticipating. I think planning out meals and doing as much prep work in advance as possible definitely helped me avoid cheating. Lunch time is the most difficult. I think because I usually just grab something quick in between getting lunch ready for my boys and cleaning up after them.  To have something ready to go has been a lifesaver. 

I have tried a few new recipes but mostly I adapted old favorites to be Whole 30 compliant.  Since I am the only one in my household who is doing this, I knew I couldn't get crazy and try a bunch of different recipes that only contained kale and sweet potatoes.  I did my best to find things that the rest of my family would like to eat, but that would also be easy for me to adapt.

Fresh Cashew Milk (Whole 30 compliant)

Whelp, I'm on day seven of my Whole 30 adventure and so far, it's been ok. I have always cooked the majority of our meals, so being in the kitchen a lot wasn't a huge adjustment for me. However, breakfast has been a little more labor intensive then my usual routine. Prior to starting this program, I had a smoothie, usually with almond or coconut milk, protein powder, fruit, and usually kale or spinach. Making smoothies was quick and easy...and didn't require me to cook anything or clean up many dishes. I also like smoothies because you can drink them on the go, whether that be in the car or sometimes just even running back and forth down our hallway.

Kale Salad with Lemon Dressing (Whole 30 compliant)

I have grown to love kale over the past 5 or so years and it's quickly become my go-to salad for a tasty lunch during the summer.  I will usually choose kale over iceberg or romain any chance I'm given.  This lemon dressing is one of my all time faves!  It all started with a visit to Cooper's Hawk about a year ago for my birthday.  A group of friends joined me for dinner and we discovered their shaved brussels sprout salad, which had a similar lemon dressing, marcona almonds, and parmesan cheese.  It was TO DIE!  I dreamt of this salad for weeks, and then my sister in law found this recipe that was damn close to the one we had at the restaurant!  I have made it countless times and when I decided to do Whole 30, I knew I could easily adapt this recipe to be compliant.

Nordstrom Anniversary Sale: PART 3

I know, I know...ANOTHER post about the Nordstrom sale???  Yes.  It is.  I wasn't going to do another one, but then I kept looking.  And kept finding things that were so cute!  So, I had to share.  Because that's what I like to do!  If I find something amazing, I want you all to know about it or else I can't sleep at night. And you wouldn't want me to loose sleep now would you?  If you missed the other posts you can get them here:  PART 1 and PART 2

Nordstrom's site crashed Thursday and lots of people were suuuuuuuuper upset.  I have never been so thankful to have been woken up by my son at 4:30am because I beat the crowd, and the site issues.  I continued to shop, however, and kept finding so many adorable things, so here's ANOTHER post!  Sorry.  Or, you're welcome.  However you want to look at it!

If you are looking for a fall/winter jacket, they did not disappoint with their selection this year.  There are lots of different styles to choose from.

1 Faux leather moto jacket <--under $65!!!  This one was a hot item last year, and they brought it back by popular demand.  If you are looking for a leather jacket, but don't want to spend the $$ on a real one, this is a great faux option!   Last year's version had silver buttons and zipper, but this year's has brassy/gold, which I love!
2 Fur collar Anorak  Fur collars are still popular and I love the olive green, but it also comes in black.
3 Madewell Utility and cropped utility here  I invested in a military jacket last year and it was my go to all fall/spring.  It is super neutral and goes with more then you may originally think.  I have the classic one, but I'm kinda digging the cropped one too!
4 Envelope collar pea coat  Such a classic, pretty shape that would be flattering on anyone.
5 Metallic moto  LOVE LOVE  LOVE this!  How cool is this jacket?  I just think this is amazing if you can't tell!  So fun!
6 North Face vest  Classic vest for those days when you don't want a coat
7 Peplum coat  Another classic pea coat, and I love the peplum detail.
8 Camo  Like the military jacket above, this can be worn with more then you may think.  Camo is surprisingly neutral!
Fur trimmed vest  More fur!
10 Velvet moto  I think this is super fun and funky!  I love the velvet, which is pretty hot this year.  Lots of velvet stuff out there right now.
11 Fur trim puffer  Gotta love a good puffer jacket.
12 Quilted bomber  Pretty!
13 Quilted Anorak  And this one is a little longer if you want something to cover your bum.

There are lots of fragrances and makeup deals, but those are so personal, so you'll just have to check those out on your own.  I do think these things were worth mentioning:

1 Sugar  I love Sugar lip balm!  They feel like butter on your lips.  I've never tried the tinted ones, but I'm sure they are great.
2 Mac Lip set  This looks like a great neutral shade that would look good on almost anyone
3 PMD  I don't own one of these, but I have heard great things about them.   And I know they rarely go on sale, so if you have been wanting one, I'd jump on this opportunity!
4 Jo Malone set  These fragrances are all so unique and they can be layered, so a set like this is perfect for trying out the different scents!
5 Clarisonic Mia  This is a great price for a Clarisonic.  I usually only see them discounted this low around Black Friday.
6 Supergroup sunscreen  This scores a 4 on, and that's pretty darn good for sunscreen.   On sale, the 3 pack is $38, which is less than $13 per can...that's what you would pay for chemical ridden sunscreen from Target!
7 Drybar set  If you're a Drybar fan, then you know this stuff rarely goes on sale!
8 Beauty Blender  This is the only way I will put on foundation!  It is the best applicator!
9 Nest diffuser  Technically not a beauty item, but still worth mentioning!  I love Nest candles and diffusers, and they also rarely go on sale, so if you like 'em, stock up while they are discounted!
10 butter London polish  Love these colors for fall!
11 Clarisonic refills  If you missed your chance to stock up during Amazon Prime Day, here's a 2nd chance!  How many times in life do you get a second chance? ;)
12 Living Proof  Another product that is never on sale
13 St Tropez  This is rated as one of the best self tanners!

Nordstrom Anniversary Sale!

Yay!  Are you ready to SHOP?!?!?!  My son woke up at 4:30, wanting me to "fix his blanket" again... (if you saw my IG stories, you know what I'm talking about), so I have been perusing the sale since the weeeee hours this morning.

There are TONS of great deals and this is such a great sale because it's new merchandise that they are discounting in preparation for fall/ lots of boots/booties, jeans, cardigans, sweaters, etc.

The sale is not open to the public yet, it is currently just open to Nordstrom cardholders.  To gain early access, click here.  It officially opens to the public on July 21, so if you don't have a card, you can still flag these items and hope with all of your might that they will be available in a week.

Summer Sandals

I feel like summer just started, but it seems to be FLYING by!  After the 4th of July, it always feels like the end of summer is lurking around the corner, teasing us like a playground bully that it will soon be time to go back to school and start picking pumpkins.  I am going to try to make the most of of the 2nd half of summer, but it's hard to do when its so. dang. hot.

I've been living in sandals, as I'm sure most of you have been too.  I thought I'd share some of my faves that helped get me through spring and into summer.

Summertime Skincare Routine

Hey there friends!  I hope everyone had a safe and fun 4th of July!  We celebrated early this year, so last night was just kind of chill around our house.  We watched some of the displays from our yard, but then turned in early for the first time in quite a while.  My boys slept in this morning, which is super rare around here, so they definitely needed to catch up on some sleep!  Having a quiet morning around here, I took full advantage and decided to round up the skincare items I have been using lately!

I thought my skincare routine was pretty basic, until I laid out all of the products I use on a daily basis...  It seems like a lot of products, but I really do still think it's on the basic side.  I don't have time for an extravagant routine.  Some days I debate even putting makeup on because I don't want to have to remove it at the end of the day!  #lazy  I don't use anything too fancy, but there are some items I really love, so I wanted to share them with you!

Over the years, I have made gradual changes in the skincare products I purchase.  I try to lean towards products that don't have a lot of bad ingredients in them, but sometimes it's reeeeeeally hard to find something that works well and is also free of parabens, sulfates, oxybenzone, aluminum, etc.  Not everything I use is free of junk, but I try my best.  I have kind of a "pick your poison" mentality when it comes to things like this.  If there's a product I just absolutely love, but it contains some yucky stuff, then I try not to worry about it and just make changes in other ways to sort-of counter balance things.  It's really just my way of justifying it, but I'm not perfect and neither is my medicine cabinet!  Skincare companies are making changes and more and more natural/organic products are becoming hopefully soon these bad ingredients won't even exist anymore and we won't even have to worry about constantly reading labels!

In the mornings, I'll wash my face with this Andalou Naturals Cleansing Gel and then moisturize with the Clinique City Block, which has SPF 40.  I use this underneath my makeup and it acts as a primer.  On days I am going to the pool or just don't feel like putting makeup on, sometimes I'll switch it up and use Andalou Naturals Ultra Sheer Daily Defense.  It goes on smooth, rubs in nicely and doesn't leave my face white like a lot of other natural sunscreens.  I really like the Andalou Naturals line.  I have tried several things and have liked most of them, with the exception of the CC cream.  It was too greasy for me.

Ok, so after I apply sunscreen, I usually apply my makeup, but I'll save the makeup products for another post.   ;)  I apply sunscreen every. single. day. period.  I think it is super important in the prevention of fine lines on my face, so it's just a habit I have formed and I don't go a day without applying some form of SPF.

In the evening, I always, always, ALWAYS remove my makeup before I go to bed.  If I have one piece of advice for you, it would be to remove your makeup!  (Well, actually two: use sunscreen and remove your makeup)  Don't go to sleep in it, let you skin breathe!  I have never had perfect skin...I keep waiting for the day when my skin will grow up and stop looking like a teenager with breakouts.  But, I have been waiting a long time and it still hasn't happened so my expectations at this point are pretty low.  I always have a pimple or two, or ten, so I try and do the best I can to ensure I don't add to the already existing problem.  When I do have a pimple, I love this Nelson's Acne Gel.  I've used it for 10+ years, and it really helps bring the pimple to the surface and kill the bacteria.  I originally read about it in a People magazine article discussing Gisele Bundchen's skincare routine.  If It was good enough for Gisele, it was good enough for me, so I gave it a try and was hooked.  It's all natural, and the tea tree oil is an antibacterial agent.

I keep this Lemon Sugar Scrub in the shower and use it on my face a few times a week.  It smells SOOOO good!  Can I get a whoop whoop for lemons!?!?  #lemonloversunite  On days I don't use the scrub, I try to exfoliate with the Clarisonic.  I put a pump of the Andalou Naturals Cleaning Gel on the bristles and gently move it around my face in a circular motion.

I am not devoted to any certain eye cream.  I do however think eye cream is important, especially the older I get.  I am currently using a sample from Clinque called Pep-Start.  Oddly, I couldn't find it online, but here's a similar eye cream.

I also started using a Vitamin C serum a couple of years ago.  I put this on in the evenings, after I wash my face, but before I apply any moisturizer.  Speaking of moisturizer, before bed, I do apply a cream to keep my face hydrated.  Right now I'm using the Andalou Naturals Recovery Cream.  I also really like Clinque Moisture Surge.  I have used them for several years now and for some reason, I keep going back and forth between them.  I just love them both!

Not pictured are a few other items I can't live without.  One being coconut oil!   It is the BEST for removing eye makeup.  I rub a small amount on my eyes and my eye makeup comes off very easily.  I also love the Simple Cleansing wipes.   After I smear my eye makeup with the coconut oil, I use a cleansing wipe to remove the makeup from my entire face and then wipe my eyes clean.  A makeup artist once told me that there is a big difference between removing your makeup and cleansing your face.   After I have wiped my makeup off, I will wash my face with either the Cleaninsg Gel I mentioned above and the Clarisonic, or the Lemon scrub.

And lastly, I love these face tan towelettes.  I try to use one each week, but sometimes a lot of times I just forget.  After I've cleaned my face, I'll rub one all over my entire face, neck, and décolletage.  It soaks in overnight and I have a little more color to my face in the morning!

Oh, one more thing....this post is really all about my face, but I also wanted to mention my favorite body lotion!  I have used this body butter for years and it's my absolute fave lotion!  I get the aloe kind because it doesn't have fragrance, and scores lower on the skincare rating.  It's super hydrating for my skin so I use it all year round!  They often have sales, but the best deals are usually around Black Friday and I stock up for the entire year.

So, that's it!  It seems like a lot when I type it all out, but I really do still feel like it's a pretty basic routine.  Or maybe that's just what high maintenance girls tell themselves ;)
