Random Ramblings

Hey there folks!  Happy Friday!  Here's a quick roundup of some miscellaneous things currently going on in our lives. 

Battling the winter gunk:
Along with the rest of America, we've been a little under the weather around here this week. We've managed to remain fairly healthy this winter, but it all caught up with us after we got back from Mexico last week. Beckham ended up with a sinus infection and I can't seem to kick this annoying cough, which seems to rear it's ugly head when I lay down to sleep. Blah.  When I get a throat tickle, I've been relying on these to help!

Looking forward to the weekend: 
Once I quit my 8-5 job and started staying home with my son, I started noticing that I no longer had the rush of excitement for the weekend to arrive. Weekdays and weekends were very similar and my routine hardly changed from Friday to Saturday or Sunday to Monday. There once was a time, after a long work week, I desperately  looked forward to Fridays, which usually consisted of happy hour and a good meal out, followed by additional cocktails and a morning of sleeping in on Saturday.  That quickly changed to passing out from exhaustion at 8pm and being woken up at 5:30am by a chipper babe, ready to party, despite my best efforts to convince him that he (I) needed more sleep.  That being said I'm really looking forward to this weekend!  We have beautiful weather in the forecast, so I'm hoping a little sunshine and fresh air will help everyone feel better!  

Bathroom renovations:
After living in this house for a year and a half, we finally pulled the trigger on our bathroom renovations!  Whoop whoop!!!  I'll post more updates as we get further into the process. Right now my house is covered in dust. COVERED. It's a messy job, that remodeling business!  

Our master bathroom is tiny compared to the master baths of today's standards.  We had 1 sink, a tiny shower, no tub, and a pocket door that is supposed to close off the toilet area, except it doesn't work and instead of giving you privacy, it traps you in the bathroom until you can be rescued by someone on the other side.  The vanity was unusually low and the walls were covered in green speckled tile from the 70's. The boys' bathroom had 1 sink and a tub but no shower.  So, I'm very excited we have officially started renovations on these bathrooms!


Get Lucky for cheap: 
My favorite booties are currently on sale!  So many different colors to choose from.  I love the heel detail on the black ones!  

Eggplant Involtini:
I have only cooked eggplant once in my entire life.  A few years ago, I attempted to make eggplant parmesan, and it was a complete disaster.  It made a HUGE mess, and while the end result tasted pretty good, the prep and the clean up was enough to convince me I should never make it again.  If I want eggplant parmesan, I'll be calling the local Italian restaurant and ordering takeout.  For some reason, this eggplant involtini recipe caught my eye the other day.  I made it last night, and it was absolutely delish!  Easy to assemble and little cleanup required! 

Blast from the past: 
My mom has been bringing boxes of stuff from her attic each time she comes to visit. It's been so fun to go through all of the different things from my childhood and dust off old memories. My 20th high school reunion is coming up and man that makes me feel old!  When did that happen?  I feel like I blinked and now I have 2 kids, a husband and I somehow turned into a grownup.   Here are a couple of pictures I found:



My first dance recital.  Can you pick me out of the bunch?



We just went to Cancun earlier this month, and they no longer allow tourists to climb Chichen Itza, so it was neat to find this picture that we took from the top of the pyramid prior to the climbing ban.
