Classic Cheeseball

Are you a magician?  Because whenever I look at you, everyone else disappears.

I seem to have lost my phone number.  Can I have yours?

Is your daddy a baker?  Because you've got some nice buns!

Bwahahahaha!  Am I the only one laughing at these cheeseball pick up lines?   Yes?

Um, ok.  I just couldn't have a conversation about cheeseballs without a little cheeseball humor.  So, humor me, will ya?

Moving on.  Cheeseballs are that appetizer that no one wants to admit they love, but it's always the first thing people go for on a buffet.  It's just too good to resist, but somehow it seems to have gotten a bad rap over the years.

Well, I'm ready to promote it back to appetizer worthy status!  Let's even get fancy and call it an hors d'oeuvre!  No?  Too fancy?  Ok.  We'll just stick to appetizer for now.

At any rate, they are delicious!  And the best part is they are super simple to make.  You can make them in advance, and have it ready in the fridge for game day, book club night, or just a random Tuesday when a playdate happens to turn into cocktail hour!

8 oz cream cheese, softened
8 oz sharp white cheddar cheese, shredded
2 Tbs chives, finely chopped
2 dashes hot sauce, or more if you want to spice it up
1 1/2 tsp Worcestershire
1/2 tsp garlic powder
1/4 tsp paprika
3/4 cup chopped pecans, or almonds


In a large bowl, or the bowl of a stand mixer, beat cream cheese until smooth.  Add remaining ingredients, except pecans, and mix well.  Spoon cheese mixture onto a large sheet of plastic wrap or wax paper and form into a ball.  Wrap cheese ball tightly and chill for a minimum of 1 hour.  Just prior to serving, remove cheese ball from plastic wrap and roll in chopped pecans. Serve with crackers or sliced veggies.
